I've never heard of the word "scrummy" until now. It means "yummy" – in British English (thanks for the inspiration, Ray!). And there's nothing more British than the mandatory Tea Time which really is not complete without scones. Actually it's a scone, but they are only referred to in the plural form – wonder why that is … So these fluffy little bread-like cakes are so good, I actually prefer eating them fresh from the oven and without anything on top. Most cover them with butter, yam, honey or – a Brits favorite – clotted cream. However, they are really easy to make, and if you can't eat them all at once, just pop them in the microwave for a couple seconds!
Ingredients:
- 500 g flour
- 250 g yoghurt
- 120 g butter (at room temperature)
- 40 g sugar
- 5 teaspoons baking powder
- 2 eggs
- 1 egg yolk
- 1 pinch of salt
Preparation:
Sift the flour into a large bowl. Add the two eggs, the yoghurt, the soft butter, the sugar, the baking powder and the pinch of salt and knead well until you have an even dough.
Preheat the oven to 375 F° (190 C°) and line a baking tray with a baking sheet.
Sprinkle your working surface with flour, roll the dough out to 3/4-inch-thickness and stamp out 2-inch-rounds with a plain pastry cutter.
Transfer the dough-rounds to the baking tray. Beat the egg yolk with 1 tablespoon of water, brush the dough-rounds with it and bake them for about 15 minutes.
Transfer the scones to a wire rack to cool off – or eat them warm.
Zubereitung:
Siebe das Mehl in eine große Schüssel. Gib die zwei Eier, den Joghurt, die weiche Butter, den Zucker, das Backpulver und die Prise Salz dazu und knete mit den Knethaken des Handrührgeräts bis Du einen ebenmäßigen Teig hast.
Heize den Ofen auf 190 C° vor und belege ein Backblech mit Backpapier.
Bestäube Deine Arbeitsfläche mit Mehl, roll den Teig etwa 2 cm dick aus und steche dann Kreise von 6-7 cm Durchmesser aus.
Leg die Teigkreise auf das Backblech. Schlage das Eigelb zusammen mit einem EL Wasser schaumig, bepinsel die Teigkreise damit und back sie etwa 15 Minuten lang.
Leg die Scones zum Abkühlen auf ein Küchenrost – oder genieße sie warm.
